Anchovies are small (generally 5 to 8 inches long) saltwater forage fish of the Engraulidae family, shiny and silver-green. Anchovies are found in scattered areas throughout the world’s oceans, but are concentrated in temperate waters, and are rare or absent in very cold or very warm seas. South Pacific Ocean’s fisheries (Peru) are the biggest source of anchovies worldwide.
