Anchovy Buttered Popcorn

Ingredients

  • ½ cup popcorn kernels, popped using your preferred method (or 12 cups, unseasoned popped popcorn)
  • ⅓ cup unsalted butter, softened to room temperature, divided
  • ½ x can (106g) Millionnaires Anchovy Fillets in extra virgin olive oil, finely chopped
  • 1 clove garlic, finely minced
  • 1 tbsp chopped fresh chives
  • 1 tsp chopped fresh rosemary or thyme
  • 1 tsp chili flakes (optional)
  • Salt to taste

Directions

  1. In a small pot over medium heat warm 1 tbsp butter along with about 1 tbsp olive oil from the anchovy can. Add minced garlic and chopped anchovies and sauté until sizzling and fragrant, taking care not to brown the garlic, 2 to 3 minutes.
  2. Remove from heat then add remaining butter and stir until melted. Stir in chopped herbs and chili flakes (if using) and toss with popped popcorn and salt to taste.
