Ingredients

  • 1 can (106 g) Club des Millionnaires Wild Brisling Sardines in Olive Oil
  • 2 tsp tomato paste, we used Nonna Pia’s
  • ½ tsp garlic powder
  • ¾ cup cherry tomatoes cut into quarters
  • 2 tsp capers, roughly chopped
  • ½ lemon, zest only
  • 2 x ½-in (2.5 cm) thick slices sourdough bread
  • ¼ cup shredded Gruyere cheese
  • A few basil leaves, torn
  • Freshly ground black pepper, to taste

Directions

  1. Preheat oven or toaster oven to 400 F (200 C)
  2. Open sardines and pour oil into a mixing bowl. Add tomato paste and garlic and whisk until smooth.  Add cherry tomatoes, capers, lemon zest and sardines and toss to coat.
  3. Spoon sardine-tomato mixture onto bread, top with shredded gruyere cheese and transfer to toaster oven. Cook until bread is toasted and cheese is melted, 5 to 7 minutes. Finish with freshly torn basil leaves and a bit of freshly ground black pepper.
  4. For an easy lunch at the office, make the sardine-tomato topping the night before and bread and toast it when ready.
